Demon's Souls
Very quick look at HDR in Demon’s Souls on PS5 Pro.
At standard in-game settings there are no 100% black colors in the game. There is always some black level raise. In some areas more than others (see image 3 and 4).
The game uses fog all the time both indoors and outdoors. A tiny layer of fog could cause the black level raise.
Highlights are way too bright. They go up to around 4000 nits.
When I played it in 2020/2021 on an LG CX OLED with 800 nits peak brightness, I found the game very dim. The overall brightness didn’t bother me so much today on my 2000 nits s90c. So I expect the game to set brightness automatically based on PS5's system level HDR calibration for both peak brightness and midtones.
I couldn’t find a place to test for paper white or overall brightness, because the game scenes are in dark areas most of the time.
If the game released on PC then there would be much to improve. Black levels and highlights and maybe also to remove some of the tiny fog layer.
